Roast Spatchcocked Lemon Chicken This flattened bird is a game-changer: it halves the cooking time by nearly half while evenly cooking the bird. If the grill or oven’s large enough, roast two - leftover meat is ideal for salads, sandwiches, or just a quick hit of protein. Cooking time will naturally vary depending on lots of factors - the size of your bake, the weather, and the temperature of your fire. But as a general rule, plan on 1.5-2 hours from the moment you set your steamer on the stand until serving time.
